Orange-Flavored Pork Secret


  • A piece of approximately 1.5 kg
  • 1 litre of orange juice
  • Two tbsp sugar
  • Five tbsp of water
  • Salt, pepper and oil


  1. Preheat the oven to 200º.
  2. In a very hot frying pan with oil, seal the secret on both sides.
  3. Place the piece in a deep baking dish and season with salt and pepper, cover with the orange juice and cover the dish with another baking dish placed upside down.
  4. Put it in the oven for 2 hours.
  5. When finished, turn off the oven and without opening it it stays inside for 3 more hours or a whole night.
  6. After this time, remove any layer of fat that may have remained on the surface of the sauce, remove the meat from the dish and set aside.
  7. In a separate saucepan, put the water with the sugar. When it reduces to syrup, add the reduced orange sauce where the secret has been roasted.
  8. Reduce to medium heat for about 45 minutes.
  9. To serve, a mash is made with potatoes and celeriac bulb that contrasts very well with the sweetness of the sauce.
  10. The base puree and the sliced sliced secret with orange sauce are served.
