Romescu Sauce

I present you the recipe for Romescu Sauce, for approximately 300 ml of sauce, in just four steps, it is very very simple!


  • 3 large, ripe tomatoes
  • 10 raw almonds
  • 60 gr stale bread
  • 2 garlic cloves
  • 2 peppers


  1. Cut the peppers, remove their seeds and put them in water to hydrate.
  2. Make a cross cut on the top of the tomatoes. Roast them with oil and salt, at 180º until they are toasted a lot.
  3. On the same tray, place the stale bread, the garlic cloves with skin and the almonds and toast everything very well again.
  4. Peel everything (garlic, tomato and drained ñora), add oil, a little white vinegar and salt and blend until you get a very fine sauce.
