Masa Coca Alicante

This delicious dough can be made with all kinds of ingredients: grilled vegetables, canned sardines, smoked salmon, pata negra ham, anchovies with olives… to the consumer’s liking! This is the traditional Coca Alicante, which, as I understand, is prepared in the bonfires of San Juan with very candied onion and “tonyina”.

Many customers who taste the dough of the coca de l’Atmosphère ask me the recipe, so today, I make it public for all of you.


  • 500 gr flour
  • 1 soda of each color
  • Pinch of salt
  • 200 ml oil
  • 200 ml white wine

The amount of flour is approximate. To know how much is enough, you have to be able to pick up the dough by hand, and without it being too dense it should be easy to spread.

I recommend starting with 350 g of flour and work your way up. It depends on the humidity of the day and the time of year… That’s cooking, it’s not an exact science.

To bake, put the oven at 180°C for approximately 15 minutes, you have to take into account that it cannot dry out, it must be moist.
