Melon gazpacho

Before going on vacation I would like to share with you a super summery recipe that I, personally, love: melon gazpacho. To make it, you’ll need 1 kg of tomatoes and 1 kg of melons. First, blanch and peel the tomato, then crush it with the melon. Then add olive oil and salt to taste. To give it a special touch, you can add Serrano ham that you have previously toasted well in the oven and mash it together with the tomato and melon mixture.

Et voilà, you have a spectacular, fresh and different gazpacho!
