Marinated Tuna


  • 1 piece of red tuna, approximately 1 kg
  • 200 ml of light soy sauce
  • 300 ml of mild olive oil
  • Juice of 2 lemons Zest of 2 lemons
  • 1 piece of grated ginger
  • 1 grated garlic clove
  • 2 tbsp of honey Sweet red paprika
  • 1 tsp of Gran Massala curr


  1. Cut the tuna into fillets and marinate for 2 hours with all the ingredients
  2. After 2 hours, lightly grill the tuna without oil.
  3. Before serving, we will give it a final touch of heat in the oven. It has to stay red on the inside to retain all its tender texture and flavor.


  • It can be served with a Chinese noodle wok with mushrooms, mushrooms, red peppers, and tender garlic.
  • Also with bean sprouts to give a fresh touch to the dish. And cilantro for those who like it (which is not my case! In fact, at l’Atmosphère, if you’ve noticed, there’s no coriander in any dish…
  • Another idea is to turbine the marinade. It is a perfect emulsion to plate the tuna or serve alongside, in a bowl to accompany the dish.
