Squid with creamy peas, artichokes and ham powder


  • Cebollas

  • Ham

  1. Chiseel 3 onions, sauté them in olive oil until they are transparent and well done.
  2. In the thermomix or in a blinder, put the onions with their oil and 500 gr of frozen peas. Turbinate, season and we have the pea cream. If it becomes too thick, we would add virgin olive oil.
  3. Take 3 slices of Serrano ham and put them on a tray in the oven, almost at the top of 220º so that it toasts a lot.
  4. When the ham is very dry, take it out and grind it to a powdery texture.
  5. Clean and remove the skin from the squid and cut them into 3 pieces.
  6. Peel the artichokes so that there are no hard leaves and keep them in water with parsley leaves so that they do not oxidize.
  7. Sauté the artichokes to brown them and finish them by covering the pots to steam.
  8. At the time of serving, we have the artichokes and the pea cream over a low heat so that it comes out at a good temperature.
  9. Sauté the squid in a sautéed

How to serve:

In a deep dish, place in order:

  1. Cream of pea soup
  2. Artichokes
  3. Squid
  4. Ham powder

You will be left with a beautiful and very appetizing dish!
