Shortcrust pastry base
• 250 g plain flour
• 50 g of sugar
• A pinch of salt
• 175 g softened butter
• 1 egg

• 600 g whipping cream
• 8 tablespoons sugar
• A pinch of salt
• 6 whole eggs
• 80 g blue or Roquefort cheese
• 300 g Philadelfia cream cheese

1. Heat oven to 180 degrees.
2. To make the base, put the flour, sugar and salt in a bowl. Gradually mix the butter into the softened while kneading.
3. Add the egg and mix well.
4. Roll out the dough with a rolling pin and line a buttered and floured 24cm round tin.
5. Bake this dough at 180 degrees until golden brown, about 15 minutes or so.
6. Mix the blue cheese with a little of the cream until smooth. Add the cream cheese, eggs, sugar, salt and the rest of the cream and beat well.
7. Pour the mixture into the pan and bake at 180 degrees for 35 minutes. The 35 minutes are if the oven is not opened during cooking. If not, cooking with a skewer will have to be considered.
